Ingredients
β 1 lb shrimp, peeled & deveined
β 1 tbsp olive oil
β 1 tsp taco seasoning
β 4 large flour tortillas
β 1 cup cooked rice
β 1 cup black beans, drained
β Β½ cup corn
β 1 cup shredded lettuce
β Β½ cup diced tomatoes
β ΒΌ cup diced red onion
β 1 avocado, sliced or mashed
β Β½ cup sour cream or Greek yogurt
β Optional: cilantro, lime wedges, salsa
Instructions
Cook Shrimp: Heat olive oil in a skillet over medium heat. Toss shrimp with taco seasoning and cook 2-3 minutes per side until pink.
Warm Tortillas: Heat in a microwave or skillet until soft.
Assemble: Layer rice, beans, corn, shrimp, lettuce, tomatoes, onion, and avocado onto tortillas.
Wrap: Fold sides inward and roll tightly.
Serve: Slice in half and enjoy with sour cream, salsa, and lime wedges!
