Ingredients
– 1 lb shrimp, peeled & deveined
– 1 tbsp olive oil
– 1 tsp taco seasoning
– 4 large flour tortillas
– 1 cup cooked rice
– 1 cup black beans, drained
– ½ cup corn
– 1 cup shredded lettuce
– ½ cup diced tomatoes
– ¼ cup diced red onion
– 1 avocado, sliced or mashed
– ½ cup sour cream or Greek yogurt
– Optional: cilantro, lime wedges, salsa
Instructions
1️⃣ Cook Shrimp: Heat olive oil in a skillet over medium heat. Toss shrimp with taco seasoning and cook 2-3 minutes per side until pink.
2️⃣ Warm Tortillas: Heat in a microwave or skillet until soft.
3️⃣ Assemble: Layer rice, beans, corn, shrimp, lettuce, tomatoes, onion, and avocado onto tortillas.
4️⃣ Wrap: Fold sides inward and roll tightly.
5️⃣ Serve: Slice in half and enjoy with sour cream, salsa, and lime wedges!
