4-6 beef short ribs (bone-in)
2 tablespoons olive oil
Salt and pepper to taste
1 onion, sliced
4 garlic cloves, smashed
1 cup beef broth (or water)
1/2 cup red wine (optional, for added depth of flavor)
2 tablespoons Worcestershire sauce
2 sprigs fresh rosemary (or 1 teaspoon dried rosemary)
2 sprigs fresh thyme (or 1 teaspoon dried thyme)
1 bay leaf (optional)

Preheat the oven:

Preheat your oven to 300°F (150°C).
Season the ribs:

Pat the beef short ribs dry with paper towels. This will help them sear better.
Generously season all sides of the short ribs with salt and pepper.
Sear the short ribs:

Heat olive oil in a large, oven-safe Dutch oven or heavy pot over medium-high heat.
Once the oil is hot, add the short ribs and sear on all sides until browned, about 2-3 minutes per side. This adds great flavor to the meat.
Remove the ribs from the pot and set aside.
Cook the aromatics:

In the same pot, add the sliced onion and garlic. Sauté for 2-3 minutes, or until softened and fragrant.
Deglaze the pot:

If using wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom of the pot with a wooden spoon. This adds a lot of flavor.
Let the wine cook off for a minute or two, then add the beef broth and Worcestershire sauce. Stir to combine.
Add herbs and return the ribs:

Add the rosemary, thyme, and bay leaf (if using) to the pot.
Return the short ribs to the pot, making sure they are partially submerged in the liquid. If needed, add more broth or water to cover the ribs about halfway.
Slow-cook the short ribs:

Cover the pot with a lid and transfer it to the preheated oven.
Cook the ribs for about 2.5 to 3 hours, or until the meat is tender and easily pulls away from the bone.
Serve:

Remove the pot from the oven and let the ribs rest for a few minutes.
Serve the short ribs with the pan sauce, mashed potatoes, rice, or your favorite side dishes.
Optional:
If you prefer a thicker sauce, you can transfer the sauce to a small saucepan after removing the ribs and simmer it over medium heat until reduced to your desired consistency.
