Ingredients:
For the Sourdough Dough:
1 cup sourdough starter (active & bubbly)
2 ½ cups all-purpose flour
½ cup warm water
1 tbsp olive oil
1 tsp salt
1 tsp sugar
For the Filling:
1 cup shredded mozzarella cheese
½ cup marinara sauce (plus extra for dipping)
20-25 slices pepperoni
¼ tsp dried oregano
¼ tsp red pepper flakes (optional)
For Brushing:
3 tbsp butter, melted
1 clove garlic, minced
2 tbsp grated parmesan cheese
½ tsp Italian seasoning
Instructions:
Prepare the Dough – In a large bowl, mix the sourdough starter, flour, warm water, olive oil, salt, and sugar. Knead until smooth (about 8-10 minutes). Cover and let rise at room temperature for 4-6 hours, or until doubled.
Preheat Oven to 400°F (200°C) and line a baking sheet with parchment paper.
Divide & Roll – Divide the dough into 6 equal pieces. Roll each piece into a 6-inch circle.
Fill the Calzones – Spread about 1 tbsp of marinara sauce on half of each dough circle, leaving a small border. Sprinkle mozzarella cheese, layer pepperoni slices, and add a pinch of oregano and red pepper flakes.
Seal the Pockets – Fold the dough over the filling to form a half-moon shape. Press and crimp the edges with a fork to seal tightly.
Garlic-Parmesan Butter – Mix melted butter, minced garlic, parmesan, and Italian seasoning. Brush over the tops of the calzones.
Bake – Place calzones on the baking sheet and bake for 18-22 minutes, until golden brown and crispy.
Serve & Enjoy! – Let cool slightly before serving with extra marinara sauce for dipping.
