12 oz spaghetti
2 tbsp olive oil
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Crushed red pepper flakes (optional)

1. Cook spaghetti until al dente, then drain and set aside.
2. In a skillet over medium heat, warm olive oil and sauté garlic until fragrant.
3. Stir in sun-dried tomatoes and spinach, cooking until the spinach wilts.
4. Add heavy cream and bring to a simmer. Slowly stir in Parmesan until the sauce is smooth.
5. Mix in the spaghetti, ensuring everything is coated in the sauce. Season to taste.
6. Serve immediately with more Parmesan, if desired.
