Spicy Bok Choy in Garlic Sauce

1 lb baby bok choy, halved lengthwise
1 tbsp vegetable oil or sesame oil
4 cloves garlic, minced
1 tsp ginger, grated
2 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tbsp rice vinegar
1 tsp chili garlic sauce or sriracha (adjust to heat preference)
½ tsp sugar
2 tbsp water
1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
For Garnish:
Toasted sesame seeds
Chopped green onions

Heat oil in a large skillet or wok over medium-high heat.
Add garlic and ginger, sauté for 30 seconds until fragrant.
Add bok choy and stir-fry for 2-3 minutes until slightly tender but still crisp.
In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, chili garlic sauce, sugar, and water.
Pour the sauce over the bok choy and stir well to coat.
If using, stir in the cornstarch slurry and cook for 1-2 more minutes until sauce thickens slightly.
Remove from heat and transfer to a serving plate.
Garnish with sesame seeds and green onions.
