Instructions:
1. Chip Prep: If you are using frozen fries, preheat your oven according to package instructions and cook the fries until golden brown and crispy. If youβre using fresh potato chips, cut the potatoes into sticks, rinse and dry them, then fry them in hot oil until golden brown.
2. Cooking the chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper then add to the skillet. Cook each side for about 6-7 minutes, or until the chicken is golden brown and cooked through. Take the chicken out of the pan and reserve.
3. Prepare the Sauce: In the same skillet, add the minced garlic and simmer for about 1 minute, until fragrant. Add heavy cream and bring to a gentle boil. Reduce heat and incorporate parmesan cheese and red pepper flakes. Stir until cheese is melted and sauce is smooth. Season with salt and black pepper to your liking.
4. Combine: Put chicken breasts back in the pan with the sauce. Let simmer for 2-3 minutes to coat the chicken in the creamy sauce.
5. Serve: Arrange chicken breasts on plates, drizzled in gravy, and serve with crispy fries on the side. You can top the dish with a few extra red chili flakes for a pop of color and spiciness.
