Instructions
Prepare the Steak:
Let the steaks rest at room temperature for 30 minutes.
Season generously with salt and black pepper on both sides.
Sear the Steaks:
Heat olive oil in a medium skillet over medium-high heat.

Sear on all sides until a golden brown crust forms.
Add Butter & Aromatics:
Reduce heat to medium. Add butter, garlic, rosemary, and thyme to the skillet.

Prep the Potatoes:
Scrub the potatoes and cut them into 1/4-inch thick sticks.
Soak the cut potatoes in cold water for 30 minutes to remove excess starch.
Drain and pat dry thoroughly with a paper towel.
Fry the Potatoes:
Heat 2 inches of oil in a deep pot or fryer to 350°F (175°C).
Fry the potatoes in batches for 8-10 minutes until golden and tender.
Drain on a paper towel-lined plate and season immediately with salt and pepper.
