Just whipped up this Surf and Turf Delight – the perfect combo of steak and scallops for a special evening at home!
Ingredients:
– 2 ribeye steaks (about 1 inch thick)
– 6 large sea scallops, patted dry
– 2 tablespoons olive oil
– 3 tablespoons unsalted butter
– 2 cloves garlic, minced
– 1 tablespoon fresh parsley, finely chopped
– 1 tablespoon fresh thyme leaves
– Salt and black pepper to taste
Directions:
- Season the steaks and scallops with salt and black pepper.
- Heat a skillet over medium-high heat and add 1 tablespoon olive oil. Once hot, add the steaks. Cook for about 4-5 minutes on each side for medium-rare. Remove from the skillet and let rest.
- In the same skillet, add another tablespoon of olive oil. Place scallops in the skillet, and sear for about 1-2 minutes on each side, until a golden crust forms. Remove and set aside.
- Lower the heat to medium and add butter to the skillet. Once melted, add garlic, parsley, and thyme, cooking for about 1 minute until fragrant.
- Return the scallops to the skillet to coat them in the herb butter sauce.
- Serve the steaks and scallops together, drizzling any remaining herb butter over the steak.
