170g sour cream or 3/4 cup Greek yogurt
Zest and juice of 1/2 lime
1/2 teaspoon sugar
For Assembly:
8 large lettuce leaves (romaine, butter, or iceberg)
Directions:
Marinate the Shrimp:
In a bowl, combine shrimp, olive oil, taco seasoning, and lime juice. Mix well and marinate for 30 minutes.
Cook the Shrimp:
Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until opaque and slightly caramelized. Pour in the remaining marinade and cook for another minute. Remove from heat.
Prepare the Salad:
In a bowl, combine cherry tomatoes, chopped onion, sweet corn, garlic powder, olive oil, and parsley. Season with salt and pepper. Toss well and set aside.
Make the Avocado Mash:
Roughly mash the avocados with lime juice and salt. Keep it slightly chunky for texture.
Whisk the Creamy Lime Sauce:
In a small bowl, whisk together sour cream (or Greek yogurt), lime zest, lime juice, and sugar.

Place a spoonful of avocado mash on each lettuce leaf. Add a few shrimp, followed by the fresh salad. Drizzle with the creamy lime sauce.
