1️⃣ Cook the Ground Beef
In a large pot, brown the ground beef with the chopped onion over medium heat until the beef is cooked through and the onion is soft. Drain any excess fat.

2️⃣ Add Creaminess
Reduce the heat to low and add the cream cheese. Stir until it’s fully melted and incorporated into the beef mixture.

3️⃣ Combine the Ingredients
Pour in the Rotel tomatoes, chicken broth or stock, garlic powder, and taco seasoning. Stir well to combine.

4️⃣ Simmer the Soup
Increase the heat to medium and bring the soup to a gentle simmer. Reduce the heat to low and let it cook for about 30 minutes, stirring occasionally to blend the flavors.

5️⃣ Taste and Adjust
Taste the soup and adjust the seasoning, if necessary.

6️⃣ Serve and Enjoy
Ladle the hot taco soup into bowls and top with shredded cheddar cheese and a dollop of sour cream. Serve with tortilla chips or warm cornbread for a complete meal!

Pro Tip: Add extra toppings like diced avocado, chopped cilantro, or sliced jalapeños for even more flavor!
