– 1 ΒΌ lb. lean ground beef
– 1 cup Italian seasoned breadcrumbs
– 2 large eggs
– Β½ cup finely diced onion
– 2 tsp garlic powder
– 2 tsp dried parsley
– 1 tsp salt
– 1 tsp black pepper
– Β½ cup honey BBQ sauce
– 1 cup Bob Evans Macaroni and Cheese
– 1 cup shredded mozzarella cheese
For the topping:
– 1/3 cup ketchup
– 2 tbsp brown sugar
– 1 Β½ tbsp yellow mustard

1. Preheat your oven to 350Β°F (175Β°C). Line a baking sheet with foil and lightly spray it with non-stick spray.
2. In a large bowl, mix the lean ground beef, breadcrumbs, eggs, onion, garlic powder, parsley, salt, pepper, and honey BBQ sauce until well combined.
3. Shape half of the meat mixture into an 8”x4” loaf in the center of a casserole dish. Press down in the center to create a small cavity, leaving the sides about 1 inch thick.
4. In a separate bowl, combine the Bob Evans macaroni and cheese with the mozzarella cheese. Pour this mixture into the cavity in the meat loaf. Use the remaining meat mixture to top the loaf, ensuring the macaroni and cheese are enclosed by pinching the sides closed.
5. Bake for 40 minutes, then increase the oven temperature to 400Β°F (200Β°C).
6. In a small bowl, mix the ketchup, brown sugar, and yellow mustard for the topping. Pour or brush this mixture over the meatloaf.
7. Return the meatloaf to the oven for an additional 10 to 15 minutes, or until the meatloaf is cooked through and the topping is bubbly.
8. Allow the meatloaf to rest for 5 to 10 minutes before slicing and serving.

Notes:
For a twist, you can add cooked and crumbled bacon to the mac and cheese filling for extra flavor.
