2 salmon fillets
2 tbsp olive oil
1 tsp dried Italian seasoning
Salt and pepper to taste
8 oz penne pasta
1 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
Fresh basil for garnish
Preparation:
Preheat oven to 375°F (190°C). Season salmon fillets with olive oil, Italian seasoning, salt, and pepper. Place on a baking sheet and bake for 12-15 minutes, or until cooked through.
While the salmon bakes, cook the penne pasta according to package instructions. Drain and set aside.
In a large pan, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
Stir in heavy cream and bring to a simmer. Add Parmesan cheese, stirring until the sauce thickens.
Mix in sun-dried tomatoes and cooked penne. Toss to coat the pasta in the creamy sauce.
Serve the creamy Alfredo penne topped with the baked salmon fillets and garnish with fresh basil. Enjoy!
