3 lb veal roast (loin or shoulder)
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp olive oil
2 tbsp butter, melted
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp dried thyme (optional)
1 cup beef or veal broth
Instructions:
1️⃣ Preheat the Oven:
Preheat your oven to 375°F (190°C).
Pat the veal roast dry with paper towels.
2️⃣ Season the Veal:
In a bowl, mix olive oil, melted butter, garlic, rosemary, salt, pepper, paprika, and thyme.
Rub this mixture all over the veal, ensuring even coverage.
3️⃣ Sear for Extra Flavor (Optional):
Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.
Sear the veal on all sides until golden brown (about 2-3 minutes per side).
4️⃣ Roast to Perfection:
Place the veal in a roasting pan.
Pour broth (not over) the roast to keep it moist.
Roast uncovered for 60-75 minutes, or until the internal temperature reaches 140°F (60°C) for medium-rare or 150°F (65°C) for medium.
5️⃣ Rest & Serve:
Remove the veal from the oven and tent it with foil.
Let it rest for 10-15 minutes before slicing to keep it juicy.
