Ingredients:

– 2 ribeye steaks

– 1 cup balsamic vinegar

– 8 oz fresh mozzarella, sliced

– 2 cups cherry tomatoes, halved

– 1/4 cup fresh basil leaves, chopped

– Salt and pepper to taste

– Olive oil for grilling

Directions:

– Preheat your grill to medium-high heat.

– In a small saucepan, reduce the balsamic vinegar over medium heat until thickened, about 10 minutes. Set aside.

– Season the steaks with salt and pepper, then brush with olive oil.

– Grill the steaks for about 5-7 minutes on each side for medium-rare, or until desired doneness.

– In the last minute of grilling, top each steak with mozzarella slices to melt slightly.

– Remove steaks from the grill and let rest for a few minutes.

– Top with cherry tomatoes, fresh basil, and drizzle with the balsamic reduction before serving.
