4 cups cold day old cooked rice
1 lb shrimp, deveined & tail off
10 oz andouille or kielbasa, cut in 1/2 in pieces
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
1/2 cup white or yellow onion, chopped
6 tbsp olive oil, divided
3 cloves garlic, minced
4 eggs, beaten
4 tbsp soy sauce
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder
1/4 tsp cayenne pepper
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp oregano
2 tbsp fresh parsley
2 tbsp cajun seasoning
In a large bowl add shrimp and sausages with 2 tbsp of olive oil and cajun seasoning.
In a large skillet add 2 tbsp oil over medium-high heat and cook shrimp 2-3 minutes on each side. Remove from skillet and put aside. Add sausages and cook approximately 2 minutes on wach side. Remove and put aside.
Add in bell peppers and onions, cooking until softened, approximately 5 minutes. Add in garlic and cook 1 minute, until fragrant.
With a spatula scoot peppers and onions to one side of the skillet. Add in beaten eggs and scramble them. Once scrambled, add in rice, breaking up with your spatula. Add in paprika, onion powder, garlic powder, chili powder, cayenne, oregano, parsley, pepper. Next add in soy sauce.
Return shrimp and sausage to skillet and toss into rice. Enjoy!
