Air Fryer Cheesy Bacon Potato Skins

 

 

 

 

 

Ingredients:

4 large russet potatoes
2 tablespoons olive oil
Salt and pepper, to taste
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup green onions, chopped
Sour cream, for serving

Directions:

Wash and thoroughly dry the potatoes. Pierce them with a fork and microwave them for 10 minutes or until they are soft enough to scoop.
Cut the potatoes in half lengthwise and let them cool. Once cool, scoop out the flesh, leaving about 1/4 inch of potato on the skin.
Brush both sides of the potato skins with olive oil and season with salt and pepper. Place the skins in the air fryer basket.
Cook in the air fryer at 400°F (200°C) for 10 minutes or until they are crispy and golden.
Remove the skins from the air fryer and sprinkle cheese and bacon into each. Return to the air fryer and cook for an additional 2-3 minutes, or until the cheese is melted.
Garnish with green onions and serve with sour cream on the side.
