Ingredients:
1/2 lb sirloin steak, cut into bite-sized pieces, 1 tablespoon olive oil, Salt and black pepper, to taste, 1/2 teaspoon garlic powder, 6-8 breakfast sausages or small smoked sausages, 2 large eggs, 1 tablespoon butter, 1 cup diced bell peppers (mixed colors), 1/2 teaspoon smoked paprika, Fresh parsley, chopped (optional)
Directions:
Preheat a skillet over medium heat. Add olive oil, diced bell peppers, smoked paprika, salt, and black pepper. Sauté for 5-7 minutes until softened and lightly caramelized. Remove and set aside. In the same skillet, heat olive oil over medium-high heat. Season the steak bites with salt, black pepper, and garlic powder. Add them to the skillet and sear for 2-3 minutes per side until golden brown. Remove and set aside. Add a teaspoon of olive oil to the skillet and cook the sausages, turning occasionally, until golden brown and cooked through (about 5 minutes). Remove and set aside. Heat butter in a non-stick skillet over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny (about 2-3 minutes). Season with salt and black pepper. Arrange the steak bites, sausages, roasted vegetables, and eggs on a plate or in a bowl. Garnish with freshly chopped parsley and serve immediately. Optional: Add crispy hash browns or avocado slices for extra texture and flavor, and drizzle hot sauce or hollandaise over the eggs for an extra kick.
