Ingredients:

โ€“ 1 ripe avocado, mashed
โ€“ 1 can (15 oz) chickpeas, drained and rinsed
โ€“ 1/4 cup red onion, finely chopped
โ€“ 1/4 cup celery, finely chopped
โ€“ 2 tbsp fresh parsley, chopped
โ€“ 1 tbsp lemon juice
โ€“ 1/2 tsp garlic powder
โ€“ Salt and pepper to taste
โ€“ 8 slices whole grain bread
โ€“ Optional: lettuce, tomato, sprouts for assembling

 

Directions:

1. In a mixing bowl, combine mashed avocado and chickpeas. Mash some chickpeas for texture.
2. Add red onion, celery, parsley, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
3. Toast the whole grain bread slices if desired.
4. Divide the avocado chickpea salad onto 4 bread slices.
5. Top with lettuce, tomato, sprouts, or additional toppings of your choice.
6. Place the remaining bread slices on top to form sandwiches.
7. Serve fresh and enjoy the creamy goodness!
