Ingredients:

– 2 lbs beef chuck, cut into cubes
– 4 cups beef broth
– 3 carrots, sliced
– 2 potatoes, cubed
– 1 onion, chopped
– 3 cloves garlic, minced
– 1 tablespoon tomato paste
– 1 teaspoon dried thyme
– 2 bay leaves
– Salt and pepper to taste
– 2 tablespoons olive oil

1. In a large pot, heat olive oil over medium-high heat.
2. Add the beef cubes and brown on all sides.
3. Remove the beef and set aside.
4. In the same pot, add the onion and garlic; sautΓ© until softened.
5. Stir in the tomato paste, thyme, salt, and pepper.
6. Return the beef to the pot, then add beef broth, carrots, potatoes, and bay leaves.
7. Bring to a boil, then reduce heat to low and cover.
8. Simmer for about 1.5 to 2 hours, or until the beef is tender.
9. Adjust seasoning if necessary and serve hot.
