Ingredients:
For the Patty Melts:
1 ½ lbs ground beef (80/20)
Salt and pepper, to taste
6 slices cheddar cheese
3 Vidalia onions, thinly sliced
6 slices rye bread (or Texas toast for a twist)
2 tbsp unsalted butter (for onions)
2 tbsp butter (for grilling)
For the Secret Sauce:
½ cup mayonnaise
2 tbsp ketchup
1 tbsp Dijon mustard
1 tbsp finely chopped pickles or relish
1 tsp Worcestershire sauce
Pinch of paprika (optional)
Salt & pepper to taste
Instructions:
Step 1: Make the Secret Sauce
1. In a small bowl, combine all secret sauce ingredients.
2. Mix well and refrigerate until ready to use (ideally at least 15 minutes to blend flavors).
Step 2: Caramelize the Onions
1. In a large skillet over medium-low heat, melt 2 tbsp butter.
2. Add the thinly sliced Vidalia onions and a pinch of salt.
3. Cook low and slow, stirring occasionally, for about 25–30 minutes until deep golden and caramelized. Don’t rush this—it’s where the magic happens.
Step 3: Shape and Cook the Patties
1. Divide the ground beef into 3 equal portions, and flatten them into oval patties roughly the shape of your bread.
2. Season both sides with salt and pepper.
3. In a skillet or griddle over medium-high heat, cook patties for about 3–4 minutes per side, until fully cooked and browned. Remove and set aside.
Step 4: Build the Patty Melts
1. Spread secret sauce on each slice of bread.
2. Layer in this order:
Bread slice (sauce-side in)
Cheddar cheese slice
Beef patty
Caramelized onions
Another cheese slice
Top with another bread slice (sauce-side in)
Step 5: Grill the Patty Melts
1. Wipe out skillet, then melt 1 tbsp butter over medium heat.
2. Cook each sandwich 2–3 minutes per side, pressing down slightly, until golden brown and cheese is melted. Add more butter as needed.
