– 2 cups chocolate cookie crumbs
– 1/2 cup unsalted butter, melted

– 1 cup sugar

– 2 cups pitted cherries (fresh or canned)

– 1 tbsp cornstarch
– 1/2 cup water
– 1 tbsp lemon juice

Directions:

1. Prepare the Crust: Start by preheating your oven to 325°F (160°C). In a mixing bowl, combine your chocolate cookie crumbs and melted butter until everything is well mixed. Press this mixture firmly into the bottom of a springform pan. Pop it in the oven for 10 minutes and let it cool completely afterward.

2. Make the Cheesecake Batter: In a large bowl, use an electric mixer to beat the cream cheese until it’s super smooth. Gradually add the sugar and mix well. Then, mix in the sour cream. Add the eggs one at a time, ensuring each is fully blended before adding the next. Stir in the melted dark chocolate and vanilla extract until you have a beautifully creamy mixture.
