Ingredients:
1 lb cooked brisket, shredded or sliced
1 cup bourbon
½ cup maple syrup
8 slices of bread (thick-cut works best)
4 waffles (homemade or frozen, toasted)
2 cups shredded cheddar cheese
Butter (for grilling)
Instructions:
1. Make the Bourbon-Maple Glaze:
In a small saucepan over medium heat, combine bourbon and maple syrup.
Bring to a boil, then reduce heat and simmer until thickened slightly (about 10–15 minutes).
Stir frequently to prevent burning.
Add shredded brisket to the glaze and simmer for 5 more minutes until warmed and coated. Remove from heat.

2. Assemble the Sandwiches:
Butter one side of each bread slice.
On the unbuttered side of 4 slices, layer:
A handful of cheddar cheese
A generous portion of bourbon-maple brisket
A little more cheese (for extra meltiness)
Top each with a slice of bread, buttered side facing out.
3. Grill the Sandwiches:
Heat a skillet or griddle over medium heat.
Cook each sandwich for 3–5 minutes per side, pressing gently, until golden brown and the cheese is melted.
4. Build the Wafflewiches:
Place one grilled cheese sandwich on top of a toasted waffle.
Top with a second waffle to make a “wafflewich.”
Optional: Drizzle extra maple syrup over the top for a sweet-savory finish.
