Instructions:
Prepare the lobster tails: Using kitchen shears, carefully cut down the top of each lobster tail shell, stopping at the tail fin. Gently pull the meat out of the shell and rest it on top, keeping the shell intact underneath.
Preheat the oven: Set the oven to broil and position the rack about 6 inches from the heat source.
Make the garlic butter: In a small bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, salt, and pepper.
Brush the lobster: Place the lobster tails on a baking sheet. Generously brush the garlic butter over the lobster meat, coating well.
Broil the lobster tails: Broil for 8–10 minutes, or until the meat is opaque and lightly golden. Baste with more garlic butter halfway through to keep moist. Internal temperature should reach 140°F (60°C).
Garnish and serve: Sprinkle with fresh parsley and paprika. Serve with lemon wedges.
