1. Sear the Chops
Pat pork chops dry; season with salt and pepper.
Heat oil in a large skillet over medium-high heat.
Sear chops 4–5 minutes per side, until golden and internal temp reaches 145°F (63°C).
Transfer to a plate; tent with foil.
2. Make the Glaze
In the same skillet, reduce heat to medium.
Add garlic; sauté 30 seconds until fragrant.
Whisk in brown sugar, soy sauce, Dijon, vinegar, and water.
Simmer 2–3 minutes, until thickened and syrupy.
