For the Main:
1 fresh burrata ball
1½ cups cherry tomatoes (red or mixed color)
2 tbsp extra virgin olive oil
1 clove garlic, minced
Salt & freshly cracked black pepper to taste
Crushed red pepper (optional)
Fresh basil leaves
For the Crostini:
Baguette or Italian loaf, sliced
Olive oil for brushing
1 clove garlic (whole) to rub on bread
Instructions:1. Roast the Tomatoes:
Preheat oven to 400°F (200°C).
Toss cherry tomatoes in a bowl with olive oil, minced garlic, salt, and pepper.
Spread them on a baking tray and roast for 15–20 minutes, until blistered and slightly caramelized.
2. Make the Crostini:
While tomatoes roast, brush bread slices with olive oil.
Toast in the oven or on a grill pan until golden (about 5 min each side).
Rub each slice with the whole garlic clove once toasted.
3. Assemble:
Place the burrata in the center of a plate.
Spoon roasted tomatoes around it.
Drizzle with more olive oil and sprinkle cracked pepper or red pepper flakes.
Top with fresh basil leaves.
4. Serve:
Enjoy with the garlic crostini for dipping and spreading.

Serve with a glass of dry white wine like Pinot Grigio or light red wine like Chianti.
