Instructions
Begin by preparing the lobster tail. Use kitchen shears to cut down the center of the top shell lengthwise, stopping just before the tail fan. Gently lift the lobster meat through the opening, resting it on top of the shell for a refined presentation. Season the lobster meat with a light sprinkle of salt, black pepper, and a bit of lemon zest.
Heat one tablespoon of butter in a skillet over medium heat. Once melted and lightly bubbling, add the lobster tail meat and sear for 2 to 3 minutes per side until the meat is opaque and has a slight golden color. Remove the lobster from the pan and set it aside, keeping it warm.
Next, prepare the scallops. Pat them very dry once more and season with salt and black pepper on both sides. Heat the olive oil in a separate skillet or wipe the original pan clean and return it to medium-high heat. Once hot, add the scallops in a single layer, making sure they do not touch. Sear for 1 and a half to 2 minutes per side, without moving them, until a golden crust forms. Flip and sear the other side for the same amount of time. Transfer the scallops to a warm plate.
Reduce the heat to medium and add the remaining two tablespoons of butter to the pan. Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Add the lemon juice and a pinch more lemon zest. Let the sauce simmer for another 30 seconds, then remove from heat.
To plate, place the lobster tail on a serving plate alongside the seared scallops. Spoon the warm garlic butter sauce generously over the seafood. Garnish with fresh parsley and serve with lemon wedges on the side.
