Ingredients
1 whole turkey (10–14 lbs), fully thawed
1/2 cup Cajun seasoning
1/4 cup garlic powder
2 tbsp paprika
2 tbsp onion powder
1 tbsp black pepper
1 tbsp salt (optional, depending on Cajun mix)
1/2 cup melted butter
1/3 cup hot sauce (optional for extra heat)
3–4 gallons peanut oil (for frying)
Instructions
1. Prepare the Turkey
Pat the turkey completely dry with paper towels (inside and out).
Remove any giblets from the cavity.
Make sure there is no moisture on the skin — this is important for safety when frying.
2. Cajun Butter Injection (Optional but recommended)
Mix together:
Melted butter
Hot sauce
2 tbsp Cajun seasoning
Use a meat injector to inject the mixture into:
Breast
Thighs
Legs
This makes the turkey extra juicy and flavorful.
3. Season the Turkey
Rub the entire turkey (inside and outside) with Cajun seasoning, garlic powder, pepper, paprika, and onion powder.
Let it rest for at least 1 hour, or refrigerate overnight for deeper flavor.
4. Heat the Oil
In a large turkey fryer, heat peanut oil to 350°F (175°C).
Use a thermometer to keep the temperature stable.
5. Fry the Turkey
Turn off the burner before lowering the turkey in.
Slowly and carefully lower the turkey into the hot oil.
Turn the burner back on and fry for 3–4 minutes per pound.
6. Check for Doneness
The turkey is done when internal temperature reaches:
165°F (74°C) in the breast
175°F–180°F (80°C–82°C) in the thigh
7. Rest and Serve
Let the turkey rest for 20–30 minutes before slicing.
