Ingredients:
4 turkey sausages, sliced
1 lb shrimp, peeled and deveined
4 red potatoes, quartered
2 pieces corn, quartered
2 tablespoons oil, divided
1 tablespoon butter, cubed
4 cloves garlic, minced
For the Cajun Spice Mix:
2 teaspoons garlic powder
2 ½ teaspoons paprika
1 ¼ teaspoons dried oregano
1 teaspoon onion powder
1 ¼ teaspoons dried thyme
½ teaspoon red pepper flakes
1 teaspoon cayenne pepper
2 teaspoons salt
1 teaspoon pepper
Directions:
1. Preheat the oven to 400°F (200°C). Grease a large baking sheet with 1 tablespoon of oil.
2. In a small bowl, mix all the Cajun spice ingredients until well combined.
3. Place the potatoes and corn on the prepared baking sheet. Drizzle with 1 tablespoon of oil and sprinkle with 2 teaspoons of the Cajun spice mix. Toss to coat and bake for 20 minutes.
4. After 20 minutes, add the turkey sausages, shrimp, minced garlic, and butter cubes to the baking sheet. Sprinkle with the remaining Cajun spice mix and toss everything together.
5. Return to the oven and bake for another 12-15 minutes, or until the shrimp are pink and fully cooked and the vegetables are tender.
6. Serve hot, garnished with additional parsley or lemon wedges if desired.
