1 cup stone-ground grits, 4 cups chicken broth (or water), 1/2 cup heavy cream, 1 cup shredded cheddar cheese, 2 tbsp butter, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 lb shrimp, peeled & deveined, 6 oz smoked sausage, sliced, 1 tbsp olive oil, 1 tbsp butter, 1/2 tsp salt, 1/2 tsp black pepper, 1 tsp Cajun seasoning, 1/2 tsp paprika, 1 garlic clove, minced, 1 tbsp lemon juice, 1/4 cup shredded cheddar cheese, 1 tbsp chopped chives, 1/2 tsp red pepper flakes (optional for spice).

1. Cook the Grits: In a saucepan, bring chicken broth to a boil. Add grits, reduce heat to low, and cook for 15-20 minutes, stirring occasionally. Stir in heavy cream, cheese, butter, salt, and black pepper. Keep warm while preparing the shrimp.
2. Sauté the Sausage & Shrimp: Heat olive oil in a pan over medium heat. Add sausage slices and cook until browned (about 3-4 minutes). Add shrimp, butter, garlic, Cajun seasoning, paprika, salt, and black pepper. Sauté for 2-3 minutes per side until shrimp is pink. Squeeze in lemon juice and stir.
3. Assemble & Serve: Spoon the creamy grits into a bowl. Top with shrimp, sausage, extra shredded cheddar, and chives. Sprinkle with red pepper flakes for extra heat.
