Cheesy Pepperoni Pizza Roll-Ups with Low-Carb Tortillas

 

 

 

Ingredients:

– 4 low-carb tortillas
– 1 cup shredded mozzarella cheese
– 16 pepperoni slices
– 1/2 cup pizza sauce
– 1/2 tsp Italian seasoning
– Olive oil spray (optional)

 

Directions:

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Lay tortillas flat and spread about 2 tablespoons of pizza sauce on each.
3. Sprinkle each tortilla with 1/4 cup of mozzarella cheese.
4. Arrange 4 pepperoni slices on top of the cheese, and sprinkle with Italian seasoning.
5. Roll up each tortilla tightly, placing them seam-side down on the baking sheet.
6. Lightly spray the tops with olive oil for a crispier texture (optional).
7. Bake for 10-12 minutes or until the cheese is melted and bubbly.
8. Allow to cool slightly before slicing each roll-up into 3-4 pieces.
Note: Serve with extra pizza sauce for dipping if desired.
