Peel and slice the onions into ½-inch (1 cm) thick rings.
Separate the rings, keeping them in pairs (one larger and one smaller).
Cut the mozzarella into 4 even strips per slice.
Place a smaller onion ring inside a larger one.
Fill the gap with mozzarella strips (use two layers for extra cheesiness!).
Repeat with the remaining onion rings and freeze for 1 hour to help them hold their shape.
Prepare 3 separate bowls: flour, beaten eggs, and breadcrumbs.
Coat each onion ring in flour, then dip into the egg, then into breadcrumbs.
Repeat the egg and breadcrumb coating one more time for an extra crispy texture.
Place the coated rings back in the freezer while heating the oil.
Heat oil in a deep pan to 350°F (175°C).
Fry each ring until golden brown (about 2-3 minutes per side).
Drain on a paper towel to remove excess oil.
Serve hot with marinara sauce for dipping.
Enjoy the crispy, cheesy goodness!
