6 slices of sandwich bread, crusts removed
2 tablespoons unsalted butter, softened
¼ cup granulated sugar
1 teaspoon ground cinnamon
→ French Toast Batter
2 large eggs
¼ cup milk
½ teaspoon vanilla extract
→ Topping
1 tablespoon butter for frying
¼ cup granulated sugar + 1 teaspoon cinnamon, mixed
Maple syrup or cream cheese glaze, for drizzling
Instructions
Flatten each slice of bread using a rolling pin or the back of a spoon. Spread softened butter evenly over each slice.
In a small bowl, mix ¼ cup sugar and 1 teaspoon cinnamon. Sprinkle the mixture evenly over the buttered bread. Roll each slice tightly into a log, pressing slightly to seal.
In a shallow dish, whisk together eggs, milk, and vanilla extract until smooth.
Melt 1 tablespoon butter in a skillet over medium heat. Dip each roll-up in the egg mixture, coating evenly but not soaking. Place in the pan and cook for 2–3 minutes per side, turning until golden brown and crispy.
While still warm, roll in extra cinnamon sugar for that classic cinnamon roll taste! Serve immediately with maple syrup, powdered sugar, or a cream cheese glaze
