Coconut Curry Salmon with Jasmine Rice

– 2 salmon fillets (skin-on or off)
– 1 cup jasmine rice
– 1 can (14 oz) coconut milk
– 1 tbsp red curry paste
– 2 cloves garlic (minced)
– 1-inch ginger (grated)
– 1 tbsp soy sauce
– 1 tbsp lime juice
– 1 tbsp olive oil
– Fresh cilantro (for garnish)
**Servings: 2-4

 

Instructions:

1. Cook jasmine rice according to package instructions.
2. Heat olive oil in a pan over medium heat. Sear salmon for 3-4 minutes per side, then set aside.
3. In the same pan, sauté garlic and ginger until fragrant. Stir in red curry paste.
4. Pour in coconut milk and soy sauce, then simmer for 5 minutes.
5. Return salmon to the pan and let simmer for 3-4 minutes. Add lime juice.
6. Serve salmon over jasmine rice, topped with sauce and garnished with cilantro.
