* 500 g Shrimp, large
* 1 Cilantro, Fresh
* 2 cloves Garlic
* 1 tbsp Ginger, fresh
* 1 Lime, wedges
* 1 Onion, medium
* 1 can Coconut milk
* 1 tbsp Fish sauce
* 1 tbsp Lime juice
* 2 tbsp Curry powder
* 2 Salt and pepper
* 1 tsp Turmeric, ground
* 1 tbsp Coconut oil
* 1 tbsp Olive oil
* 1/2 tsp Cumin, ground
* 1 Rice or naan bread, Cooked

1. Heat coconut oil and olive oil in a large pan over medium heat.
2. Sauté the chopped onion, minced garlic, and grated ginger until fragrant.
3. Add curry powder, turmeric, and cumin, stirring for a minute.
4. Pour in the coconut milk, fish sauce, and lime juice, then bring to a simmer.
5. Add the shrimp and cook until pink and fully cooked.
6. Season with salt and pepper to taste.
7. Garnish with fresh cilantro and serve with rice or naan bread, along with lime wedges on the side. Enjoy!
