Cod in a Lemon Butter Tomato Sauce

 

 

 

 

 

 

 

 

Ingredients:

4 cod fillets

2 tbsp olive oil

½ cup cherry tomatoes, halved

½ cup heavy cream

2 tbsp unsalted butter

2 cloves garlic, minced

Juice of 1 lemon

1 tsp lemon zest

Salt and pepper, to taste

½ tsp red pepper flakes (optional)

Fresh parsley, chopped

 

Instructions:

Season cod with salt and pepper.

Heat oil in a skillet over medium-high. Sear cod for 3–4 minutes per side, then set aside.

Lower heat to medium. Melt butter in the same skillet.

Add garlic and cook for 1 minute.

Pour in cream, lemon juice, and zest. Let it simmer until slightly thick.
Toss in tomatoes and red pepper flakes. Cook for 1 more minute.

Return cod to the skillet. Spoon sauce over and heat for another minute.

Sprinkle parsley on top and serve warm.
