4 cod fillets (about 6 oz each)
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped (in oil, drained)
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp paprika
1/2 tsp crushed red pepper flakes (optional)
Salt & black pepper, to taste
Fresh basil or parsley, for garnish
Instructions:
1. Sear the Cod:
Pat the cod dry and season with salt, pepper, and paprika.
Heat 1 tbsp olive oil in a skillet over medium-high heat.
Sear the cod for 2-3 minutes per side until golden and nearly cooked through. Remove and set aside.
2. Make the Sauce:
In the same skillet, add 1 tbsp olive oil and the garlic. Sauté for 30 seconds.
Stir in sun-dried tomatoes and cook for another minute.
Add heavy cream and bring to a gentle simmer.
Stir in Parmesan cheese, allowing it to melt and thicken the sauce.
3. Add Spinach:
Add the spinach and cook until wilted (about 1-2 minutes).
4. Return Cod to Pan:
Gently place the cod back into the skillet
