Creamy Smoked Sausage Pasta

Ingredients:

12 oz penne pasta
1 tbsp olive oil
14 oz smoked sausage, sliced
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
½ cup grated Parmesan cheese
1 tsp paprika
1 tsp Italian seasoning
1 cup cherry tomatoes, halved
2 cups fresh spinach
Salt and black pepper to taste
Fresh parsley, chopped (optional, for garnish)

Directions:

Cook the Pasta: Bring a large pot of salted water to a boil. Cook penne pasta according to package instructions until al dente. Drain and set aside.
Cook the Sausage: Heat olive oil in a large skillet over medium-high heat. Add sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside.
Sauté Garlic and Veggies: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook for 2-3 minutes until softened. Add spinach and cook until wilted.
Make the Cream Sauce: Stir in heavy cream, chicken broth, Parmesan cheese, paprika, and Italian seasoning. Let the sauce simmer for 3-4 minutes, stirring occasionally, until slightly thickened.
Combine Everything: Add the cooked pasta and sausage back into the skillet. Toss until everything is evenly coated in the creamy sauce. Adjust seasoning with salt and pepper if needed.
Serve: Garnish with fresh parsley and extra Parmesan cheese if desired. Serve warm and enjoy!
