Ingredients:
8 beef sausages
1 tbsp vegetable oil
1 onion, sliced
2 cloves garlic, minced
1 tbsp curry powder
1 cup beef or chicken broth
1/2 cup coconut milk or cream
1 tbsp Worcestershire sauce
1 tbsp tomato sauce (ketchup)
1 tsp sugar
2 carrots, sliced
1/2 cup frozen peas
Salt and pepper, to taste
Instructions:
Cook sausages in a pan over medium heat until browned. Remove, slice into thick pieces, and set aside.
In the same pan, heat oil and sauté onion until soft. Add garlic and curry powder, cooking for 1 minute.
Pour in broth, coconut milk, Worcestershire sauce, tomato sauce, and sugar. Stir well.
Add sliced sausages and carrots. Simmer for 15-20 minutes until carrots are tender.
Stir in frozen peas and cook for another 5 minutes.
Season with salt and pepper to taste.
Serve hot over rice or mashed potatoes. Enjoy!
