Step 1. Mix Ingredients:

– In bowl, mix flour, salt, and butter or oil.

Step 2. Add Water:
– Gradually add boiling water.
– Mix until the dough comes together, then knead until the dough is smooth.
– (A stand mixer is recommended for this step due to the heat, but if mixing by hand, use a wooden spoon until the dough is warm enough to knead with your hands.)
– Add more flour or water if needed.

Step 3. Divide Dough:
– Lightly flour work surface.
– Divide into equal portions and roll into smooth balls.

Step 4. Rest Dough:
– Place the dough balls in a bowl, cover with a warm, damp paper towel, and let rest for 10-15 minutes.

Step 5. Roll Out:
– Heat a pan to medium heat.
– Lightly flour the work surface and roll out each dough ball with a rolling pin until thin.

Step 6. Cook Tortillas:
– Cook the tortillas on the hot pan or griddle until bubbles form.
– Flip and cook until lightly browned.
– Remove from heat and serve.

Notes:
– Store tortillas in an airtight container.
– They will last 2-3 days at room temperature, 5-7 days in the refrigerator, and 6-8 months in the freezer.
