Directions:
Heat olive oil in a large skillet over medium heat.

Add the diced onion and minced garlic to the skillet and sauté for 2-3 minutes until softened.
Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for another 5-6 minutes, until the vegetables are tender but still crisp.
Season with dried oregano, cumin, paprika, salt, and pepper.
Add the sliced Kalamata olives and crumbled feta cheese (if using), stirring to combine.
Garnish with fresh parsley before serving.
