Fried Chicken Gizzards

 

 

 

 

 

 

 

 

 

Ingredients

1 lb chicken gizzards, cleaned and trimmed

1 cup buttermilk (or milk with 1 tbsp vinegar)

1 egg

1 ½ cups all-purpose flour

½ cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp black pepper

1 tsp salt (more to taste)

½ tsp cayenne pepper (optional)

Oil for frying

 

Instructions

1. Tenderize the gizzards

Chicken gizzards are tough unless simmered first.

1. Place cleaned gizzards in a pot and cover with water or broth.

2. Add a pinch of salt.

3. Simmer 45–60 minutes until tender (don’t boil hard).

4. Drain and let cool.

 

2. Marinade

1. In a bowl, mix buttermilk + egg.

2. Add cooled gizzards.

3. Let soak at least 30 minutes (or up to overnight for best flavor).

 

3. Seasoned coating

In a separate bowl, mix:

Flour

Cornstarch

Garlic powder

Onion powder

Paprika

Salt

Pepper

Cayenne (if using)

4. Coat the gizzards

1. Remove gizzards from buttermilk, letting excess drip.

2. Toss in the flour mixture until coated well.

3. Let rest 5–10 minutes so the coating adheres.

 

5. Fry

1. Heat oil to 350°F (175°C).

2. Fry in batches for 3–5 minutes, until golden brown and crispy.

3. Drain on paper towels.

4. Season with extra salt if desired.

 

Serving Ideas

Dip in hot sauce, ranch, honey mustard, or spicy mayo

Serve with fries, greens, or coleslaw

Toss in buffalo or lemon pepper sauce
