INGREDIENTS:
4 large russet potatoes, sliced into thin rounds
1 large onion, thinly sliced
14 oz smoked Polish sausage, sliced into rounds
3 tablespoons butter or oil
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
1 tablespoon fresh parsley, chopped (optional)
INSTRUCTIONS:
Cook the Sausage: Heat a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
Sauté the Potatoes & Onions: In the same skillet, melt butter and add sliced potatoes. Cook for 5 minutes, then add onions. Season with smoked paprika, garlic powder, salt, pepper, and thyme. Stir occasionally and cook for another 10-12 minutes until potatoes are golden and tender.
Combine & Finish: Return the sausage to the skillet and stir everything together. Cook for 2 more minutes to blend flavors.
Serve Hot: Garnish with fresh parsley if desired and enjoy!
