Ingredients:
2 cups chicken breast, cubed
1 cup broccoli florets
1 cup spinach leaves
1/4 cup olive oil
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 tbsp garlic, minced
Instructions:
1. Cook the Chicken:
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the cubed chicken breast and season with salt and pepper (optional).
Sauté until browned and cooked through, about 5–7 minutes.
Remove the chicken and set aside.
2. Sauté the Garlic and Broccoli:
In the same skillet, add the remaining olive oil.
Add the minced garlic and sauté for 30 seconds until fragrant.
Add the broccoli florets and cook for 3–4 minutes, until tender-crisp.
3. Add Spinach and Broth:
Add the spinach leaves and stir until wilted.
Pour in the chicken broth, then return the cooked chicken to the skillet.
Simmer everything together for 3–5 minutes to let the flavors combine.
4. Finish with Parmesan:
Sprinkle the grated Parmesan cheese over the dish.
Stir until the cheese melts and the sauce slightly thickens.
5. Serve Warm:
Great on its own or over rice, pasta, or quinoa.
