1 whole octopus (about 2 lbs)
4 cups water
2 bay leaves
3 cloves garlic, minced
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp red pepper flakes
1/2 tsp dried oregano
Salt and black pepper to taste
2 tbsp butter
1 tbsp lemon juice
Fresh parsley for garnish

In a pot, bring water to a boil with bay leaves and a pinch of salt. Add octopus and simmer for 45-60 minutes until tender. Remove and pat dry.
In a pan, heat olive oil over medium-high heat. Sear the octopus for 2-3 minutes per side until lightly charred.
Lower heat, add garlic, paprika, red pepper flakes, oregano, salt, and black pepper. Stir for 30 seconds.
Add butter and lemon juice, coating the octopus in the sauce.
Serve hot, garnished with fresh parsley.
