Greek Chicken Gyros with Homemade Tzatziki

For the Chicken Marinade:
1 lb boneless, skinless chicken thighs or breasts
3 tbsp olive oil
3 tbsp lemon juice
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and drained
2 garlic cloves, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tsp fresh dill, chopped
Salt to taste
For the Gyros:
4 pita breads
Sliced tomatoes
Sliced red onion
Shredded lettuce

Marinate the chicken:
In a bowl, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper
Add chicken and toss to coat
Cover and refrigerate for at least 30 minutes (or up to 4 hours)
Cook the chicken:
Heat a skillet or grill pan over medium-high heat
Cook chicken for 5-6 minutes per side until fully cooked and golden brown
Let rest for 5 minutes before slicing into strips
Make the tzatziki sauce:
Combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt in a bowl
Mix well and refrigerate until ready to use
Assemble the gyros:
Warm pita breads in a skillet or oven
Spread tzatziki sauce on each pita
Layer with chicken, tomatoes, onion, and lettuce
Serve:
Fold the pita and serve immediately
Pair with a side of Greek salad or fries for a complete meal
