Ingredients:

โ€“ 2 ribeye steaks

โ€“ 1 cup balsamic vinegar

โ€“ 8 oz fresh mozzarella, sliced

โ€“ 2 cups cherry tomatoes, halved

โ€“ 1/4 cup fresh basil leaves, chopped

โ€“ Salt and pepper to taste

โ€“ Olive oil for grilling

Directions:

โ€“ Preheat your grill to medium-high heat.

โ€“ In a small saucepan, reduce the balsamic vinegar over medium heat until thickened, about 10 minutes. Set aside.

โ€“ Season the steaks with salt and pepper, then brush with olive oil.

โ€“ Grill the steaks for about 5-7 minutes on each side for medium-rare, or until desired doneness.

โ€“ In the last minute of grilling, top each steak with mozzarella slices to melt slightly.

โ€“ Remove steaks from the grill and let rest for a few minutes.

โ€“ Top with cherry tomatoes, fresh basil, and drizzle with the balsamic reduction before serving.
