Grilled beef and shrimp skewers with herb butter

 

 

 

 

 

 

Ingredients:

– 1 lb of meat cut into cubes
– 1 pound large shrimp, peeled and deveined
– Salt and pepper to taste
– 1/4 cup olive oil
– 4 cloves of garlic, minced
– 2 tablespoons fresh parsley, chopped
– 1 tablespoon fresh rosemary, chopped
– 1 tablespoon fresh thyme, chopped
– Wooden skewers, soaked in water

Step 1: Marinate
Season the meat and shrimp with salt, pepper and olive oil. Marinate for at least 30 minutes.

Step 2: Herb Butter
In a small bowl, mix together the minced garlic, chopped parsley, rosemary and thyme. Step aside.

Step 3: Skewers
Thread the marinated meat and shrimp onto the wooden skewers, alternating between the two.

Step 4: Grill
Preheat grill to medium-high heat. Place the skewers on the grill and cook for about 3-4 minutes per side, or until the meat is cooked to your liking and the shrimp are pink and opaque.

Step 5: Finish with Herb Butter
While the skewers are grilling, melt the herb butter in a small saucepan or microwave. Brush the herb butter over the skewers during the last minute of grilling.
