Grilled Lamb Chops & Shrimp Skewers

– 6 lamb chops (about 1-inch thick)
– 2 tbsp olive oil (for lamb)
– 2 cloves garlic, minced (for lamb)
– 1 tbsp fresh rosemary, chopped
– 1 tsp salt (for lamb)
– 1/2 tsp black pepper
– 1 lb large shrimp, peeled and deveined
– 1 tbsp olive oil (for shrimp)
– 1 tsp smoked paprika
– 1/2 tsp garlic powder (for shrimp)
– 1/2 tsp salt (for shrimp)
– 1/4 tsp cayenne pepper (optional, for heat)
– Wooden skewers (soaked in water for 20 minutes)
– 1 cup quick-cooking grits
– 3 cups chicken or vegetable broth
– 1 cup shredded sharp cheddar cheese
– 3 tbsp unsalted butter
– 2 tbsp heavy cream
– 1 tbsp fresh parsley, chopped
– 1/2 tsp garlic powder (for grits)
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)
– Melted herb butter (for garnish)

1. In a bowl, mix 2 tbsp olive oil, minced garlic, rosemary, salt, and black pepper. Rub this mixture all over the lamb chops and let them marinate for 30 minutes at room temperature.
2. Toss the peeled and deveined shrimp with 1 tbsp olive oil, smoked paprika, garlic powder, salt, and cayenne pepper. Thread the shrimp onto the soaked skewers and set aside.
3. In a medium saucepan, bring 3 cups of chicken or vegetable broth to a boil. Slowly whisk in 1 cup of grits, reduce the heat to low, and cook for 5-7 minutes, stirring until thickened. Stir in shredded cheddar cheese, 3 tbsp butter, 2 tbsp heavy cream, 1/2 tsp garlic powder, 1 tbsp chopped parsley, and season with salt and pepper. Cover and keep warm.
4. Preheat a grill or grill pan over medium-high heat. Grill the lamb chops for 3-4 minutes per side for medium-rare, or longer for desired doneness. Grill the shrimp skewers for 2-3 minutes per side until pink and slightly charred.
5. To serve, spoon the cheesy herb grits onto plates, top with grilled lamb chops and shrimp skewers, drizzle with melted herb butter, and garnish with fresh parsley.
6. Serve hot with your favorite side vegetables or a crisp salad.
