For the Lobster Tails:
4 lobster tails (split in half, shell-on)
2 tbsp olive oil
1 tsp paprika
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
1 tbsp butter (for grilling)
For the Creamy Garlic Butter Sauce:
3 tbsp butter
3 cloves garlic (minced)
½ cup heavy cream
¼ cup Parmesan cheese (grated)
½ tsp Dijon mustard
½ tsp lemon juice
¼ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley (chopped, for garnish)
Directions
1️⃣ Prepare the Lobster Tails:
Using kitchen scissors, cut down the top of the lobster shell and gently pull the meat upward while keeping it attached at the base.
Brush lobster meat with olive oil and season with paprika, salt, black pepper, and garlic powder.
2️⃣ Grill the Lobster:
Preheat the grill or a skillet over medium-high heat.
Add 1 tbsp butter and place lobster tails flesh-side down.
Grill for 2-3 minutes per side until opaque and lightly charred.
Remove from heat and set aside.
3️⃣ Make the Garlic Butter Sauce:
In a saucepan, melt butter over medium heat.
Add minced garlic and sauté for 30 seconds until fragrant.
Stir in heavy cream, Parmesan cheese, Dijon mustard, lemon juice, salt, and black pepper.
Let simmer for 3-4 minutes until thick and creamy.
4️⃣ Assemble & Serve:
Drizzle the creamy garlic butter sauce over the grilled lobster tails.
Garnish with fresh parsley and serve immediately with lemon wedges.
