Grilled Sausages with Peppers and Mashed Potatoes

For the Sausages & Peppers:

4 Italian sausages (or your preferred variety)
1 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
1 clove garlic, minced
½ tsp dried oregano
½ tsp smoked paprika
Salt and black pepper to taste
For the Mashed Potatoes:

4 medium russet potatoes, peeled and cubed
3 tbsp unsalted butter
½ cup whole milk (or heavy cream for extra creaminess)
Salt and black pepper to taste
2 tbsp chopped fresh parsley (for garnish)

Prepare the Mashed Potatoes:

Boil the cubed potatoes in salted water for 15-20 minutes until fork-tender.
Drain and return them to the pot. Add butter and warm milk, then mash until smooth and creamy. Season with salt and black pepper. Keep warm.
Grill the Sausages:

Preheat a grill or stovetop pan over medium heat.
Cook the sausages for 10-12 minutes, turning occasionally, until they are browned and cooked through. Remove from heat and set aside.
Sauté the Peppers & Onions:

Heat olive oil in a skillet over medium heat. Add the sliced bell peppers and onions, cooking for 5-7 minutes until softened.
Stir in minced garlic, oregano, smoked paprika, salt, and black pepper. Cook for another 2 minutes until fragrant.
Assemble the Dish:

Serve the grilled sausages over a generous portion of mashed potatoes.
Top with the sautéed peppers and onions. Garnish with fresh parsley and serve hot!
